Kefir Cookies – Healthy Cookie for Valentines

Kefir Cookies... hmmmmmm, this one made me ‘pause’… should I try this healthy cookie for Valentine’s Day this year, or stick with something more traditional like good ole’ fashioned chocolate? Well, I’m feeling adventurous this year, so the kefir cookie it is!

Before diving head-on into the cookie recipe, let’s take a closer look at kefir…

The drink we now call Kefir (it is sometimes pronounced Kee-Fur) originated in ancient times when Eastern nomadic shepherds discovered that fresh milk carried in leather pouches would occasionally ferment into a deliciously effervescent beverage. Once the accidental process was discovered, this bubbly refresher became popular throughout the known world. It is thought to originate from the Turkish word “Keif” meaning “good feeling”, for the sense of well-being experienced after drinking it.

Sweetheart Cookies, a healthy cookie made with kefir for Valentine’s Day 

Ingredients:
1/2 cup sugar
1/2 cup brown sugar – packed
1/4 cup margarine
1/4 cup shortening
1/2 cup Lifeway Nonfat Plain Kefir
1/2 tsp vanilla
3/4 cup flour
1/2 tsp baking soda
1/2 tsp salt
1/2 cup miniature chocolate chips

Directions:
Beat sugars, margarine & shortening until light & fluffy. Add Lifeway Nonfat Plain Kefir & vanilla.Stir in flour, baking soda, salt & chips. Drop on sheet sprayed with Pam. Bake at 375 degrees for 8-12 min. Cool 1 minute on sheet & then remove to racks.
